Using locally grown organic produce whenever possible, Cordo Resto + Bar’s Executive Chef Mitch Shafer makes the most of the changing seasons with spring dishes that showcase local delicacies with short seasons like BC Spot Prawns (with cilantro, avocado, radish, and tostadas). On the menu you’ll also find spring risotto with fresh herbs, spinach, peas, local asparagus, Grana Padano, and toasted sunflower seeds and dishes like Beets + Berries with salt-roasted local beets, beet soil, radish, dill, local berries, and strawberry vinaigrette.

Springtime brings us so much fresh produce and Isagani F2T (Farm to Table) recently opened within the Prestige Hotel, making the most of seasonal produce to offer breakfast and dinner to hotel guests and other diners, too. Try fresh dishes like poached pear salad, which features local pears, Salt Spring Island blue cheese, candied pecan, wild arugula and sun dried balsamic vinaigrette. Party al fresco in the warm spring air and celebrate the kick off in Kamloops of the 2023 Memorial Cup on May 25 (to June 4). Fans can get a free ticket to see the Arrival of the Cup presented by Kia on May 25 at 4pm at the Tk’emlúps te Secwépemc Powwow Arbour. Marking the arrival of the prestigious Memorial Cup trophy, the event will also feature a welcome & prayer by Tk’emlúps te Secwépemc along with introductions of all four Memorial Cup teams.
The fun continues with two-time JUNO award-winning rock band The Glorious Sons performing at The Riverside Party on May 25 at 7:30 p.m. The concert will be held at the Molson Canadian Hockey House, an entertainment zone located just outside the Sandman Centre. Throughout the two weeks it’ll be home to concerts, viewing parties for each Memorial Cup game, a speaker series, food and beverage options, and official event merchandise. Check out the free concert series with performances by DJ Shub (May 31), Gord Bamford (June 1), Dear Rouge (June 3) and local musicians.
